We all adore the unique summery taste of Elderflower, but cordial recipes are often rather heavy on the sugar front. On the positive side, this does allow you to preserve your beverage for longer. However, I passionately advocate using seasonal produce whenever possible, and then moving on to the next wonderful medicinal offer from mother nature. I hope you enjoy this particular recipe, my children are huge fans – raspberries are their favourite fruit!


  • 200g raspberries
  • 20 elderflower heads
  • one organic lemon
  • one litre of water
  • a few spoons of honey or coconut sugar


  • Harvest your flowers on a sunny day, and leave them near an open window to allow any bugs to make their way out.
  • Remove the flowers from the stalks and place them in a large bowl.
  • Pour the water over the flowers.
  • Zest and juice the lemon, and add to the bowl.
  • Cover the pan, and leave to infuse for about 24 hours.
  • Add the raspberries to the liquid and blend.
  • Strain through a muslin-lined sieve into a clean pan.
  • Warm up the liquid and add some honey or coconut sugar, a few spoons should do the trick – depending on your personal preference.
  • Leave to cool, bottle and label.
  • This lovely drink will last in the fridge for a week or two, or you can freeze it into little ice cubes to add to your summer cocktails. Enjoy!
